About This Event

Celebrate the start of Crave! week with an elevated 6-course kickoff dinner at Lilac & Pine inside The Davenport Hotel. This one-night-only dining experience brings together Chef Rudy Velasquez of Lilac & Pine and guest chef Adam Hegsted for a collaborative menu inspired by the Pacific Northwest, Spokane hospitality, and the energy of Crave!

Located inside The Davenport Grand, Lilac & Pine is described as a modern, Pacific Northwest-inspired restaurant rooted in Spokane’s natural beauty and spirit, with elevated comfort dishes, handcrafted cocktails, and regionally inspired flavors. The space is designed around connection, comfort, and conversation, making it a fitting home for an intimate kickoff dinner.

Chef Rudy Velasquez leads the Lilac & Pine kitchen at The Davenport and has been featured in recent Davenport culinary events, including a multi-course collaboration with Spiceology’s Tony Reed that highlighted bold flavor, spice, wine, craft cocktails, and immersive dining. Public bio information on Chef Rudy is limited, but available sources identify him as a Davenport chef connected to Lilac & Pine’s multi-course dining experiences.

Guest Chef Adam Hegsted is the chef-owner of Eat Good Group and a longtime Inland Northwest culinary leader. He is a graduate of Northwest Culinary Academy and The Art Institute of Seattle, a James Beard Award semifinalist for Best Chef: Northwest, and has cooked at the James Beard House and StarChefs in New York. His restaurants and projects have been featured in regional and national publications, including the Wall Street Journal, New York Times, and Los Angeles Times.

Together, Chef Rudy and Chef Adam will create a memorable 6-course dinner that sets the tone for Crave! with refined flavors, thoughtful pairings, and a celebration of Spokane’s culinary scene.
